Do I have to Eat Kale

My cold hard truth answer = NO. I do not eat kale. I cannot stand the taste. I do not like the texture or the flavor or the … blah any of it!

So why do I not eat kale? Well because I eat other green items like spinach, asparagus, arugula, green beans, zucchini…. And the list goes on.

I know it might sound crazy but foods that are the same colors actually provide similar nutrients. This is why we want you to eat foods of all colors

Red: strawberries, raspberries, radishes, peppers, onions, potatoes, tomatoes

Orange: oranges(duh), pumpkin, butternut squash, peppers, sweet potatoes, carrots

Yellow: yellow squash, bananas, plantains, potatoes

Green: spinach, asparagus, arugula, green beans, zucchini, kale, apples, grapes, broccoli

Blue: Blueberries, grapes, blackberries, blue tomatoes, blue carrots

Purple: grapes, eggplant, fig, plum

White: mushrooms, potatoes, cauliflower, bananas

SO when you think man I really should “eat healthier” ask yourself do eat a variety of foods from these different colors??? Some of them even overlap. I promise you if you are, you are eating pretty dang well.

When we avoid all fruits and all vegetables, especially all of one color that is when we can do a little “ bit of worrying.” You are not alone if you do not eat EVERY fruit and vegetable. I do however encourage you even if you do not like it always stay trying it.

I was 18 when I first liked tomatoes. I was 22 when I first liked eggplant. I am 34 now and you will never see me eat kale or brussels sprouts. (HAHAHA but I continue to try them … maybe one day I will like them).

So go try something you do not like and see if today will be the first day you like it!
